So I just had to put that out there first. If you are somehow protesting Gwynie, feel free to also boycott this recipe. BUT let it be known that you are also missing out on something bright, healthy, and overwhelmingly delicious.
I eat a lot of carrots here in Germany. I'm not sure if this is a typical German thing (I don't think so? I actually don't know of many traditional German recipes that revolve around carrots, though I might have to do some research on that now), but my Ökokiste almost always includes a bunch of carrots, probably because they grow easily in cooler climates. Sometimes I use all these carrots up by baking a delicious carrot cake, but more often, I throw them into a salad of some sort, and this is one of my favorites.
Green Salad with Carrot Ginger Dressing
Lettuce of your choice
1 avocado, cubes
1/2 red onion, sliced thinly
Large handful of sprouts (can be hard to find in Germany - if Sprossen are in short supply, try Kress)
Handful of mixed seeds (sunflower, pumpkin, etc.)
Handful of dried cranberries
Handful of raisins
1/2 carrot, grated
1 shallot, diced
1 Tbsp fresh ginger, either grated or diced
1 tsp honey
1 Tbsp white miso
1-2 Tbsp rice vinegar
1 Tbsp sesame oil
2 Tbsp vegetable oil
1-2 Tbsp water
- Wash lettuce and tear into pieces. Pile lettuce with the avocado, red onion, sprouts, seeds, cranberries, and raisins.
- Make the dressing by blending all the ingredients together in a blender until smooth. Add the water at the end, as much as you want to make the dressing as thick or as thin as you prefer.
