This banana bread for example- I've been making the same recipe for years (so long that I have no idea where it originated) and it is my go-to when I need something quick and easy to bake that pretty much everyone loves. I even stash bananas in the freezer so that I have all the ingredients on hand when I need them. That's a great tip by the way- never throw away over-ripe bananas! They are the best for banana bread, and keep for ages in the freezer.
In the picture above, the loaf in front is straight-up banana bread with no mix-ins, and the loaf in the back has chocolate chips and candied ginger mixed in (my favorite version!). Banana bread has endless possibilities- lots of people love it with walnuts or pecans, and you can even add a splash of bourbon or rum, or try peanut butter chips for a slightly different twist.
Favorite Banana Bread
2 cups (250 g) white flour
3/4 cup (150 g) granulated sugar
3/4 tsp baking soda
1/2 tsp salt
3/4 cup (170 g) melted butter
4 ripe bananas
1/4 cup (120 g) plain yogurt
1 tsp vanilla extract
1. Preheat oven to 350°F / 180°C.
2. Whisk the flour, sugar, baking soda, and salt together.
3. Mash bananas and mix with yogurt, eggs, melted butter, and vanilla. Fold banana mixture into flour mixture.
4. Transfer to greased (or wax paper lined) loaf pan and bake approximately 45-50 minutes, until a knife comes out clean showing that bread is baked through.
