It's not actually that bad. I love my job, and having worked first in the Washington, DC gives me serious perspective. And I have a good excuse to make delicious cheesy toasts like this for dinner! And it's snowing outside. Really, life is pretty good right now.
Cheddar Carrot Caraway Tartines
These would be great snacks for kids - a good way to add some veggies to the usual cheesiness that kids love (it's kind of like a carrot-laced grilled cheese!). Because the carrots are a similar orange to the cheddar cheese, it all just kind of melds together into an indiscernible "cheese spread." If serving to kids, you might want to dial back on the Tabasco spice.
1 medium carrot, finely grated
1 cup grated cheddar (or other cheese of your choice)
1/2 cup Frisch Käse (or cream cheese)
a few generous shakes of Tabasco or other hot sauce
a pinch of salt
1. Turn on the broiler of the oven (or turn it up to 250C).
2. Mash together the grated carrots, cheese, Frisch Käse, Tabasco, and salt.
3. Spread the carrot cheese mixture in a thick layer on slices of dark bread (like pumpernickel or "Bauernbrot"). Sprinkle with caraway seeds. Broil until cheese gets melty and outer edges of the bread slices brown.
